Preheat oven to 350F.
In a pan, sauté onions and zucchini for a few minutes (make sure not to cook them thoroughly). Drain.
Throughly mix chicken soup, sour cream, and carrots. Add to zucchini and mix.
Layer the bottom of a pyrex dish with half of the stuffing mix. Place vegetable mixture on top. Top with remaining stuffing mix. Bake for 30 to 35 minutes.
