Turkey Tetrazzini


  • ½ lb spaghetti
  • ¼ lb mushrooms
  • 5 tbsp oleo
  • 1/3 cup flour
  • 2 cups chicken broth
  • 1 cup light cream
  • 2 tbsp sherry
  • 2 cups tomato, diced
  • 2 cups turkey, diced
  • ½ cup grated parmesan
  • salt, pepper to taste


Preheat oven to 400F.

Cook spaghetti. Slice mushrooms and sauté in 1 tbsp oleo. Add remaining oleo and flour. Add chicken broth and cook, stirring, until the mixture is smooth and thick. Stir in remaining ingredients (including cooked spaghetti), and top with parmesan.

Bake, uncovered, for 20 minutes.
