Tex Mex Chicken


  • 4 cups chicken broth
  • 1 cup salsa
  • 1½ cups frozen spinach
  • 1 can kidney beans, drained
  • 1½ cups cooked chicken, shredded


Bring broth and salsa to a boil. Add spinach, and simmer until tender. Add kidney beans and chicken. Serve with topping of crumbled tortilla chips and shredded monterey jack cheese.
