Strawberry Rhubarb Cobbler


Ingredients - Filling:

  • 4 cups strawberries, thickly sliced
  • 2 cups rhubarb, sliced into half-inch thick pieces
  • ¾ cup sugar
  • 2 tbsp tapioca
  • 1/8 tsp ground cinnamon
  • 1/8 tsp ground ginger
  • 1/8 tsp ground nutmeg

Ingredients - Topping:

  • 1½ cups bisquick
  • 3/8 cup milk
  • 3 tbsp butter, melted
  • 1½ tbsp sugar
  • dash of ground cinnamon
  • dash of ground nutmeg
  • dash of ground ginger

Instructions:

Preheat oven to 400F.

Thoroughly mix all filling ingredients. Place in a baking dish, and let stand at least 20 minutes.

Thoroughly mix all topping ingredients until it resembles biscuit dough. Drop dough in eight equal parts over the strawberries. If desired, sprinkle sugar over the top. Bake for 20 minutes. Lay foil over the top of the baking dish, and bake for 20 more minutes. Serve.
