Orange Yams


Ingredients:

  • 4 lbs yams, cooked and peeled (or 2 cans, drained)
  • 2/3 cup orange juice
  • 5 tbsp brandy or rum
  • 2 tsp salt
  • 2 tsp pepper
  • 1 tsp ground ginger
  • 4 tbsp butter, melted
  • 1/3 cup brown sugar
  • 2 egg yolks

Topping:

  • 2/3 cup light brown sugar
  • 1 stick butter, melted
  • 1 cup pecans, chopped
  • 1 tsp cinnamon

Instructions:

Preheat oven to 350F.

Beat yams until smoothe. Add all other ingredients (aside from topping ingredients) and beat. Place in greased pyrex dish. Mix topping ingredients, and spread over yam mixture. Bake for 45 to 50 minutes.
