Chicken & Chile Soup


  • 1 (12 oz) can V-8
  • 2 cubes chicken boullion
  • 2 cups water
  • ½ tsp garlic powder
  • 10 green onions, chopped
  • 1 green bell pepper, chopped
  • 1 can corn, drained
  • 1 can chopped green chiles
  • 1 can diced tomatoes
  • ¼ cup cilantro, chopped
  • chicken, cooked and chopped (amount unspecified)
  • sour cream (optional, amount unspecified)


Combine all ingredients but cilantro in a large saucepan or stock pot. Cover and let sit for four hours (do not heat).

Bring mixture to a boil, and reduce to a simmer. Continue simmering, covered, for ten minutes. Add cilantro, and simmer for one more minute. Garnish each serving with sour cream, if desired.
