- 1 lb stew beef
- Enough oil to brown beef
- 2 cans diced tomatoes w/ basil, garlic, and oregano (editors note: Look for cans with "italian herbs" or "italian seasoning" on the label)
- 1 can beef broth
- 1 can whole potatoes, drained and cut
- 1 can sliced carrots, drained
- 1 can corn, drained
Heat oil in a large saucepan or stock pot. Brown and drain beef. Add beef, tomatoes, and broth to pot. Cover and simmer for 50 minutes.
Add all other ingredients. Simmer, uncovered, for ten more minutes.
