Au Gratin Vegetables


  • 3 tbsp oleo
  • 2 tbsp flour
  • 3/8 tsp salt
  • 1/8 tsp pepper
  • 1 cup milk
  • ¼ tsp dry mustard
  • ½ cup shredded cheddar cheese
  • ½ cup dry bread crumbs
  • 2 cups cooked vegetables


Preheat oven to 325F.

In a saucepan, heat two tablespoons of oleo until melted. Stir in flour, ¼ teaspoon of salt, pepper, and mustard. Cook until smooth and bubbly. Remove from heat, stir in milk, and bring mixture to a boil. Stir for one minute. Add cheese. Stir until melted. Add vegetables and mix.

Place vegetable mixture into an ungreased casserole dish. Mix bread crumbs with remaining oleo and salt. Sprinkle mixture over vegetables. Bake until thoroughly heated, around 15 minutes.
